From cocoa bean to bar
The 20°Nord 20°Sud chocolate factory is committed to the Bean to Bar movement, created in reaction to the industrialisation and standardisation of chocolate. In France, around 200 craftsmen work chocolate from the cocoa bean, and a handful work it according to the Bean to Bar movement.
20°Nord 20°Sud makes its chocolate in its factory in Notre Dame de Monts. Mélanie Paulau, the founder, chooses her producers or cooperatives with a strong social, environmental and local commitment. The dark chocolate bars are made with just 2 ingredients: cocoa beans and cane sugar. No added fat, lecithin or flavourings. The ganache and praline recipes are also made entirely in-house. Always with the same philosophy: no glucose, sorbitol or other processed ingredients.
