Sylvain and his kitchen brigade have been thinking and working together for months to come up with a menu where everyone can find something to their liking, with formulas and dishes that, wherever possible, give priority to seasonal and local produce.
It's a bistro-style cuisine, with generosity, flavour and a nod to the Vendée, but also to the rest of the world, with the occasional gastronomic touch.
